Cider Cake – 1830s

Ingredients:

2 cups flour
1 tsp. baking soda
2 tsp. cinnamon
1 cup brown sugar
½ cup (1 stick) butter, softened
1 cup cider (We used fresh cider from our friends at Solebury Orchards)

Directions:

  1. Preheat oven to 350°
  2. Grease one 9” circular cake pan and set aside.
  3. In a medium bowl, mix flour, baking powder, and any desired spices. Set bowl aside.
  4. In a large bowl, mix brown sugar and butter until smooth. Gradually mix in cider and dry ingredients to the large bowl, alternating between the two. After adding in the last of the cider and flour, mix until just combined.
  5. Pour into prepared cake pan and bake for 30-40 minutes or until a toothpick inserted in center comes out clean. Cool the cake in the pan for 30 minutes, then remove and transfer to a cooling rack to finish.

Original Recipe:

½ pt. of cider, 1 lb. of flour, ½ lb. of brown sugar, ¼ lb. of butter, small teaspoonful saleratus, fruit and spice to your taste. Bake it in a slow oven
