Peanut Butter Cookies

We stepped back into the archives today to find a recipe from a personal recipe book put together by Kathryn Michener Hart.

Ingredients:

1/2 cup shortening
1/2 cup peanut butter
1/2 cup brown sugar
1 egg (beaten)
1 1/2 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla

Directions:

  1. Preheat oven to 375° F. Grease a baking sheet or line it with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt. Set bowl aside.
  3. In large mixing bowl, cream shortening and peanut butter. Mix in sugar.
  4. Add egg and vanilla.
  5. Gradually mix dry ingredients to the peanut butter mixture until well-incorporated.
  6. Roll the dough into balls (about 1” wide) and place on prepared sheet. Using the tongs of a fork, press down on the tops of the dough to flatten and form lines in the cookies.
  7. Bake in oven 12 to 15 minutes.
  8. Remove and transfer cookies to a cooling rack to cool.
